Description:
Its soft pink robe is sublimated by a train of very fine bubbles. On the nose we find the mixture of pear-peach white fruit dominated by aromas of
strawberries, raspberries and cherries brought by the Red wine. The palate, very harmonious, develops aromas of red fruits. A cherry finish, a beautiful roundness and a full mouth characterize this cuvée.
• Blend: 70% Meunier, 15% Pinot Noir and 15% Chardonnay
• Alcoholic fermentation at 19 ° C. No malolactic fermentation
• Blend of white wine with 6 to 8% wine Meunier red from an old vine
• Dosage: 8 g/l of sugar
• 3000 bottles produced
• Terroir of Damery: clay-limestone soil
Winemaker:
Both the Goutorbe and Bouillot family have a history of winemaking dating back to the early 18th century but they came together in the 1930s when Pierrette Bouillot and Jules Goutorbe married.
The house is now managed by Dominique and Bastien and they look after 8 hectares, under both HVE and VD in the village of Damery. The wines show a lovely play of freshness alongside a brilliant touch of maturity.
