Description:
The Champagne C. de Nature Zero Dosage by Perseval-Farge is composed of 42% Pinot Noir, 27% Meunier and 31% Chardonnay from the Premier Cru vineyards of Chamery, in the Montagne de Reims. The cuvée is composed of the assemblage of several years - from 2011 to 2016 - and ferments in steel partially carrying out the malolactic fermentation, for a total of 48 months on its yeasts. No dosage - making it a Brut Nature.
C. de Nature is a Champagne with structure and great character. The nose is fresh, fruity and citrus, with an evolution on toasted hazelnut and yeasts. In the mouth it is fresh and drinkable, with great acidity and minerality with a complete and vertical sip.
A Champagne to try with tasty and decisive fish preparations, such as stewed fish or fish soups with tomatoes.
Winemaker:
Perseval-Farge was built in 1808 in Chamery, a Premier Cru village in the heart of the Montagne de Reims. Today, the 4 hectare Domaine is run by the fifth generation - Isabelle and Benoist Perseval - who continue to preserve the important identity and family heritage. Since 1990, 6 different lieux-dits have been used in the vineyard for integrated viticulture, certified "Haute Valeur Environnemental" for its commitment to the use of products and production processes that respect the environment.
The vinification and aging of all or part of the wines takes place in wooden barrels with assemblages of at least 40% of "vin de réserve" and aging time on its yeasts of not less than 5 years for the "sans année" and beyond for all vintage.
