Description:

Fruit-forward champagne with a creamy texture, ripe peach, baked apple, zesty blood orange, & red fruits flavours, long and complex. Great tension and energy with extra richness. Long lasting with a mineral finish. Food friendly with a nice
bitterness.The Champagne Papillon by Rupper-Leroy is 100% Pinot Noir, grown in the parcel (lieu-dit) "La Fosse". No final dosage and no added sulfur for this Champagne Blanc de Noir, elegant and complex.

Papillon is a sélection massale planting of Pinot Noir, 35 to 40yo vines at the bottom of the hill with south/ southwest exposure. Farmed organically since 2010, and certified biodynamic since 2014.

Vinification with natural yeast from their own grapes. The cold settling occurs naturally with the winter frosts. Alcoholic fermentation and élevage on fine lees in 225L barrels and 500L demi-muids for 9 months. Aged on the lees in bottle for
18 to 20 months.  Unfiltered, unfined & no SO2 added at any stage.

 

Winemaker: 

Benedicte Leroy's parents were originally sheep breeders in the village of Essoyes in Côte des bars –Aube. In 1980 they converted their land into vineyards, and step by step, they created a small Domaine of around 4 hectares.

In 2009, when his father retired, Benedicte left his job as a PE teacher to gear his family's domaine. Since then, he has applied the biodynamic principles both in the vines and in the cave, aiming at producing the most natural Champagnes possible. Every Cuvée comes from a single year, a single parcel (Lieu-Dit) and always without dosage (Brut Nature).
